Happy National Cookie Day! To celebrate, I thought it was only fitting to share four cookie recipes for this cookie Friday :)
I already did a post about these cookies for Christmas in 2019, so if you want the holiday version - pop on over here. But these cookies are so good and so versatile I thought they were worth repeating.
This recipe is so easy to make and packs such a great chocolate punch. It's easily a cookie tray favorite for kids and adults alike. There are no special or rare ingredients in this one either, so once you have some M&Ms (and your basic baking supplies) you are pretty much good to go.
The big change I made for the recipe this year was to use Mini M&Ms instead of full size. And there's a TON in there! :)
I really love how the Mini M&Ms disperse throughout the dough and give you a candy crunch in every bite. If you want the colors to pop a bit more, save a few to put on the top of the dough just before baking so you know they are on top.
*These are super freezer friendly and can bake right from frozen, so as soon as you see those holiday candies hit the shelves you can prep these for your Christmas cookie trays!

I made these ones up exactly the same as last time - no changes necessary!
I made these round instead of heart shaped this time around and used strawberry and apricot jam. This recipe is honestly ALWAYS a hit. I love how much everyone loves them, and using the thumbprint stamps make them look so professional and just lovely.

I use cookie stamps to elevate this classic cookie recipe and make them look just lovely on a cookie platter. I find they hold their shape well but since they do crack and have chunks of peanuts in them, a simple design I've found to work the best like the ones pictured here (stamps from Nordic Ware). This is a peanut butter cookie - not a cookie with peanut butter chips, or a peanut butter blossom. They are my cousin's favorite cookie so I make them every year for Christmas Eve or ship some to him when I won't be able to see him (like this year!) so I know they ship pretty well.
Crunchy peanut butter is the only ingredient for these I don't normally have on hand, so they are pretty simple and not too out of the box, but they are so tasty! They have that wonderful nutty-peanut-buttery flavor and are nice and tender still.
