These linzer tart cookies are such a lovely addition to a cookie tray this time of year. They are a classic and the raspberry flavor is a bright change from some of the other flavors. I didn't find the cookies needed the dusting of powdered sugar at the end, but that lovely white would help make them pop even more.
The dough itself is simple enough to make, what elevates these cookies is rolling them out and cutting out the shapes to make the sandwich cookies with the windows. Then, once baked, you spread raspberry jam (or flavor of choice) and sandwich the beauties together.
When I made these they were very delicious but so fragile, which is why I only gave them four stars. I was hoping to ship them in some cookie packages and didn't think they'd hold up they were just too delicate.
