Fettuccini with Winter Greens and Poached Egg

Happy Meatless Monday! So I was feeling ambitious and actually made pasta from scratch for this one to really let the pasta shine.  It's surprisingly easy to do, and I highly recommend trying it out sometime! I used a recipe from the Food Network Kitchen App to follow along as it was made. 


After making the fresh pasta, the recipe comes together quickly and easily.  It's a great way to use up leftover greens since it can take on pretty much any of them.  Everything else is things we normally have on hand so this is a perfect recipe to keep in your back pocket for a winter night.
