This meal is a bit of prep work because it also includes leftover Instant Pot Colombian Beans from the same cookbook, and I didn't have any leftover so I had to make them as well.  They make a ton and are freezer friendly though so great to have on hand for the future! 

The beans take quite some time, I actually finished them the next day on the stove because it just got too late for me to finish the night prior.  They turned out super delicious though so it was worth the effort.  


The slaw for the tostadas was super easy to put together and added such a great crunch and variety of flavor and texture to the dish. 


Then it was as simple as cooking up the meat and assembling!  Our store didn't fulfill tostada shells so we used the flat bottom taco shells they gave us, worked out just as well!


My only complaint about this dish?  It's hard to only eat one serving, they are so good!  I would add some additional veggies on the side next time to round out the meal a bit more.
