Soup season is in full swing here! (Unless you're my mom, then soup season is every day of the year and never left.) This is one of my go-to comfort meals.  It has an extra step at the end to finish it up so it isn't quite an easy peasy one pot soup, but I promise it is totally worth it. If you pair this with some homemade bread too, mmm delicious! 

This recipe makes about 8-10 servings, depending on how big you like you soup bowls, so it fills my Crockpot up to the brim when I make it.  


You add the roux and milk mixture at the end, so be sure it will all fit in your slow cooker before you take this on.   This is the step that I think makes it so creamy and delicious! I have what I think is an average sized slow cooker, so unless you have a small one I think you'll be good! 


I love how full of goodness every bite of soup is.  You can see the shredded chicken, veggies and rice in there.  Delicious!  I store a few servings in individual portions in the freezer to pull out for lunches on a rainy day.
