I've been on a quest for the perfect beautiful but still delicious shortbread cookies, and these are very close to perfection! With only four ingredients, they are simple enough, but the addition of the rice flour gives them that special touch and soft texture.
I used small leaf cutout cookie stamps rather than the larger ones suggested in the recipe, so I did cut a few minutes off the cook time, but otherwise I followed the recipe as directed!
They held their shape and design amazingly after thy baked, I was honestly so impressed with this!
These little leaves and acorns made a lovely addition to a fall cookie tray, and I can't wait to try it with some other holiday designs next month!
