This Gyro Loaf from the Skinnytaste Meal Prep cookbook can be used in so many ways. The recipe makes two loaves so it is perfect for meal prep as you can stick one right into the freezer for another day. I've been craving Mediterranean food this week, so this one was a no brainer for me to give a try.
The ground turkey lightens up the traditional lamb gyro but you also use some lamb so it still has that delicious taste. I was intrigued by the method of making the meat in the KitchenAid, but the result was worth the extra dishes :)
The resulting loaves bake and brown so nicely. You can then use them for whatever your heart desires! The first picture is a Gyro Salad (also from the Meal Prep Cookbook) but then I decided to make a Gyro Pizza with a pita bread crust for a quick and easy lunch. It turned out great! To meal prep either the salad or the pizza once you have the loaf done, just cut your veggies and have them ready and either make or buy tzatziki sauce. You could also do sandwiches, wraps, or bowls with this - so many possibilities.
