It pretty much comes together in one pan which is always great, and I just made some jasmine rice to go with it for a well-rounded meal.
I packed up the cucumber slices separately so it was easier to microwave.
If you are looking for a new flavor profile to mix up your meal prep rotation, definitely give this one a try. It has flavor and heat without being too spicy (but you can definitely add more of the chili paste if you want it spicier!) It reheats just fine in the microwave so it is ideal for meal prep, but also isn't too complicated if you wanted to make it for a quick weeknight dinner too.
