Vietnamese Caramelized Pork Bowls

This recipe comes together in less than 20 minutes, so it is perfect for a busy weeknight.  We used the pork, but any ground white meat would do (chicken or turkey for example).  I bought pre-shredded carrots to make it even simpler for us too. We served ours over rice (it's under all the other yummies) to round out the meal. The flavors really pop in this one so it's definitely something we've made over and over again!
