I had this chicken apple sausage in my freezer for a while and was really at a loss for ideas of what to do with it. I found this recipe on WW and decided to give it a shot since it seemed like a perfect combo for fall! I love pretty much every flavor in here, so I shouldn't have been surprised that I loved this dish! The only downside? Only eating one portion was challenging. I thought of it as a "complete meal" but I think I'd serve it with a green veggie on the side next time to keep myself from eating two servings.
Once you have everything chopped, you throw the potatoes in the microwave and the sausage and apples in a skillet. It comes together quickly and easily.
Then you scoop out the potato flesh and mix it all together with some cheese and sage and shove it back in. I did these as meal prep so I didn't finish them in the oven at this point. I just put them in some glass containers in the fridge, and let my reheating be that final bit of cooking that they needed.
