Happy National Taco Day! Tacos are a pretty regular occurrence in our house, so we've made quite a few different recipes and variations, but this particular recipe takes tacos to a whole new level.  The slow cooking of the beef and the flavors makes for such juicy and delicious taco meat.  We have also made it in the Instant Pot to save some time, and it turns out just as great!

There is a bit of pre-work with chopping and browning, but most of the magic happens hands-off which is great.  The actual taco meat portion of this is perfect for meal prep or freezer prep since the recipe makes a good amount.  You can make it into the classic tacos the recipe calls for, or turn it into taco bowls, taco salads, or even breakfast tacos! The possibilities are endless.
