Today is World Vegetarian Day so I wanted to share one of my favorite veggie
recipes. It's great for meatless Monday, meal prep, or just anytime you
want some yummy enchiladas! Please excuse the paper plate on this one, it was
meal prepped for lunch :) So this butternut squash and black bean dish is vegetarian take on enchiladas that is packed with both
veggies and protein. Honestly, you won't miss the meat in this one at
all! The filling is so hearty and delicious, with a rainbow of colors going into it, you really feel good about eating this dish.
I tend to struggle with rolling enchiladas nicely, so I did make this into
more of an enchilada casserole type dish. But you can roll them like normal as well (pictured at atop) Just a bit easier and quicker
to put together this way!
Since there's a lot of carbs and cheesy goodness in this dish, I served it up with some cauliflower rice. This recipe is a low-carb version of a popular fast food's cilantro lime rice and it's a great alternative. However, it is still cauliflower underneath which is just not my favorite no matter how many times I try to make it work. The cilantro is a nice flavor addition to help it out though for sure.
