I just love making individual sized servings on things, it makes it so much easier to keep portions in check. Plus, these reheat great for leftovers or meal prep. The bacon on top makes these mini meatloaves just feel a little bit more indulgent. We served here with a cauliflower mash but you can do regular mashed potatoes or sweet potato mash too if you prefer.
I packed up some of the leftover meatloaves with some extra veggies for additional lunches throughout the week. They reheat wonderfully and travel well! *To make these gluten free, I use oats instead of breadcrumbs.
