An overabundance of zucchini recently also led to this zucchini cake. It is like if banana bread and zucchini cake had a baby, a delicious cake baby! My cream cheese frosting did separate a bit unfortunately, but otherwise this turned out just lovely.
It took about 10 minutes less to bake in my oven then stated on the recipe, so I definitely recommend keeping an eye on the oven if it's your first time making this. I enjoyed it for dessert but the kids also enjoyed having it for breakfast. It was so moist and flavorful without being overwhelming. Plus, at only 5 Smartpoints on WW Green, it's definitely something you can work into a healthy lifestyle to get a sweet treat. Definitely a keeper!
