Anyone else's family get sick of chicken breasts all the time? Pork is a great way to switch it up! This is such a simple pork recipe but that dijon herb sauce really elevates the meal. We typically have the ingredients on hand so when pork chops are on sale we snatch them up and can make this easily. It comes together quickly too, which is always great for a weeknight meal.
We served this with some equally simple roasted veggies, and you can switch out the herbs on either recipe to make them match and go together in flavor profiles a bit better. This meal is gluten free, nutritious and low in WW Points!
