This recipe is in our regular rotation. We usually have all the ingredients on hand so it's just whatever veggies we have in the fridge. We doubled the recipe to feed our hungry teenagers and served it with rice, but you definitely don't need the rice if you want to keep it lower carb!

Two sheet pans since we doubled it (it's still 8 chicken thighs, but they were huuuuge!)
Everyone got to choose their favorite veggies so everyone stayed happy. Clean up from a sheet pan meal is also simple so it makes for a delicious and easy night!
