Pao de Queijo (Food and Wine Festival)

Pao de Queijo is a delicious, light, cheese bread that was a huge hit at our last visit to Epcot's International Food and Wine Festival. We wanted to give these a go at home and were happy to find the recipe in one of my many Disney cookbooks. Once you find tapioca flour, these are surprisingly simple to pull together.
Ingredients came together quickly, and into the muffin pan they went!
They came out of the oven a beautiful golden color. They were best fresh out of the oven but leftovers reheated pretty well throughout the week. I liked having them with eggs in the morning, they were great anytime of day!
