Lasagna is one of those classic comfort foods for me. I grew up with family members making it as a special show of their love since it can be such a labor intensive dish. As I embarked on a healthy eating journey, it became pretty apparent that the cheesy, carby layers of lasagna would have to be abandoned. But then, this recipe from WW came up and I figured I'd give it a try!
This is still more of a time consuming meal to make, but it has everything you'd want from a classic lasagna - meat, cheese & pasta - you really don't feel like you are giving up anything good. The dish makes 12 servings at 9 Smartpoints on Green each, really reasonable in my book.
A side salad would round out this meal nicely, but we splurged a little on some garlic bread and wine to go with ours. Delicious and family approved!
