I will absolutely be the first to admit I have a love-hate relationship with mint-flavored cookies. I feel like they are so necessary in the holiday season, but have had so many turn out just terrible. I've loved Andes Candies since I was a little girl and so when I saw this twist on a mint cookie, I knew I had to give it a try.
Pinwheel cookies are definitely intimidating, but I found this dough pretty easy to work with although the chocolate did crack a bit. Pinwheels also typically hold up to transport well, so they are great for cookie swaps and gatherings.
Each slice is loaded with so many delicious Andes Candies pieces , which I absolutely loved about this recipe!
These bake up beautifully for a cookie platter. The green is a nice contrast to many red cookies that pop up this time of year. The chocolate dough did crack a bit when rolling into log so I would consider making them chocolate-mint-chocolate stacks and cut into rectangles next time (to look like Andes candies) for a bit more ease with the dough. However, I thought the chocolate-mint flavor in these to be just wonderful. Not too minty, but just enough that you got that flavor you want. The little bits of candy throughout definitely helped too! :)
